Quick Tortilla Chips

Do you know when you make a great salsa and a great guacamole then go to get the bag of tortilla chips you purchased specifically for this treat, but you have five kids and the bag is not there, and nobody knows what happened to it or they all have pitiful doe eyes, so you know exactly what happened to it?!

Well, that happened.

I wasn't about to schlep out the the store on a cold evening to buy a bag a chips.  I suppose, if my man wasn't already comfortable on the couch watching UFC he would have gladly made the trip into town to get them, especially to accompany the dips.  Luckily, most of the time I have corn tortillas in the bread drawer for that  'kids, its a fend for yourself night where they'll use them to make a quick cheese quesadilla.

I took out a pack and, with a pizza cutter, cut them into triangles.  Sprayed a little olive oil on a baking pan, spread out the tortillas, sprayed a little more olive oil on the tops and sprinkled with sea salt.  I baked in a 350 degree oven until they were crispy (I didn't note the time so keep an eye on them).

Problem solved!   They were yummy!

*Note...sorry folks, this is a stock photo from yahoo...I was so excited to finally have chips for my salsa and guacamole I didn't have time to snap a photo....but that is what they looked like when they were done!
