Cucumber Salad

A while back I found a great cucumber recipe in a magazine and I thought to myself at the time, 'Dee, this is such an awesome dish you will never, ever, ever forget what magazine it's from'.  Ha!  Not so.  I searched, believe me, but to no avail.


I did, however, recently find another cucumber recipe that made the cut...and I not only recorded the magazine it was from, but am also posting it here on my blog for my own personal benefit.



Cucumber Salad

2 cucumbers peeled, seeded and cubed
1 tomato chopped (I used grape tomatoes cut in half)
1/4 red onion finely chopped
1 jalapeno pepper, seeded
4-1/2 tbls. finely chopped celantro
1 garlic clove, minced
2 tbls. finely chopped parsley

1/4 cup sour cream (you can use a low-fat version)
1-1/2 tsp lemon juice
1-1/2 tsp lime juice
1/4 tsp ground cumin
1/4 ts.p fine sea salt

Combine first seven ingredients.  In another bowl, combine last five ingredients.  Combine both and enjoy!
