Pesto Chicken Parmesan Hero

Tonight is volleyball night.  Volleyball night is a crazy night and an easy meal is usually the order of the day.   The usual volleyball night consists of daughter No. 2 driving daughter No. 3 about 45 minutes away for practice.  In the meantime I am driving daughter No. 4 in the opposite direction to another practice location.  Then I come home, drive hubby to his event, turn around and drive back to pick up daughter No. 4 as Daughter No. 2 drives daughter No.3 to dad's event to pick him up.

Anyway, a quick and easy pesto chicken parmesan hero marks the spot for dinner.

Here's what ya do.  Cut up about two skinless, boneless chicken breasts.  Make thin slices for quick cooking.  In a little olive oil saute a spoonful of minced garlic, toss in the chicken, salt and pepper to taste and cook through.  At the end of cooking add a few tablespoons of pesto (homemade or store) and stir it all around.  You do the hokey pokey.....Oh wait.    What I mean to say is, take the chicken off the heat.  Cut a loaf of crusty bread lengthwise, add freshly sliced (or shredded store) mozzarella and layer it along the bottom of the bread.  Add your chicken, top with a little marinara and pop in a 400 degree oven until the mozzarella melts.

Note:  We need another car!
