Anyway, a quick and easy pesto chicken parmesan hero marks the spot for dinner.
Here's what ya do. Cut up about two skinless, boneless chicken breasts. Make thin slices for quick cooking. In a little olive oil saute a spoonful of minced garlic, toss in the chicken, salt and pepper to taste and cook through. At the end of cooking add a few tablespoons of pesto (homemade or store) and stir it all around. You do the hokey pokey.....Oh wait. What I mean to say is, take the chicken off the heat. Cut a loaf of crusty bread lengthwise, add freshly sliced (or shredded store) mozzarella and layer it along the bottom of the bread. Add your chicken, top with a little marinara and pop in a 400 degree oven until the mozzarella melts. Note: We need another car!
