Arroz con Habichuelas - Rice and Beans




Now that you have the base recipe for my sofrito, you can continue on to make a delicious bean sauce to pour over your rice.  Rice and beans was made for dinner; the beans being poured over a basic white rice.

Habichuelas (Beans)

In a medium sauce pan, heat 2 tablespoons of olive oil.
Add 1/4 cup of cut up salchichon (a cured hard sausage, like salami...you can substitute any type of cured sausage, if you prefer)
Saute until browned
Add 1/8 cup of sofrito and saute for several minutes
Add one 8 oz. can of tomato sauce.  Saute for a few more minutes
Add one 15.5 oz can of undrained beans (the type is your preference)
Fill the bean can up with water and add water to pot
Add one packet of Goya chicken bouillon
Add one packet of Goya Sazon
Add two Tbls. of pitted green olives
Add one-two diced potatoes
Cook until the potatoes are done
Serve with white or Spanish Rice
