Platano Maduro Bread and Mini Banana Muffins - #16

Today, as you can probably tell, I needed to use up some very ripe fruit.  Mini Banana Muffins were made for a pop-in-your-mouth treat along with a loaf of Platano Maduro Bread.  I followed one recipe for both, just substituting the bananas for the platano.  Here's how it goes.

Platano Maduro Bread


2 large platano maduro (very ripe platano).....or 3-4 ripe bananas
1/3 cup melted butter
1 cup sugar (can reduce to 3/4)
1 egg, beaten
1 tsp vanilla
1 tsp. baking soda
pinch of salt
1-1/2 cups flour (white or whole wheat - your preference)

Preheat oven to 350 degrees.  Mash platano with a fork until fine and mushy.  Mix melted butter into the mashed platano.  Mix in the sugar, egg and vanilla.  Sprinkle baking soda and salt over the mixture and mix in.  Add the flour and mix.  Pour mixture into a buttered 4x8 inch loaf pan.  Bake for 1 hour.  Cool on a rack.
