Trying to come up with healthy snacks for the kids can be a bit challenging, especially if you're trying to convert them. Since having kids, the appearance of soda in our household is few and far between. When it's here, it's usually for an occasion and believe me, my kideroos try to take advantage of it. I try to get my son to eat fruit more and found that a yummy fruit smoothie is the way to go. Today's addition to their go-to-goodies is blueberry granola. So far, so good. They've been diggin' in.
Blueberry Granola
8 Cups regular oats
3/4 cups of agave
1/2 cup canola oil
1/2 cup water
1/4 cup honey
1/2 tsp salt
1 tsp vanilla
1 tsp cinnamon (and some more)
1 cup of sliced almonds
1 cup of dried blueberries
Add 8 cups of oats to a large bowl. In a saucepan, combine agave, canola, water, honey and salt. Heat until warm then add the vanilla and 1 tsp. of cinnamon. Pour over the oats and mix well. Add your almonds and blueberries and mix well. Split the mixture onto two large baking sheets. Sprinkle with cinnamon. Bake at 300 degrees for 30-40 minutes. Remove from oven, stir and sprinkle on a little more cinnamon. Return the trays to the oven but in reverse, meaning place the tray you had on the bottom rack to the top rack and the tray you had on the top rack to the bottom. Lower your temperature to 200 degrees and bake for another 30-40 minutes. Let cool. Seal in an air tight container or bag.
*Note: you can replace the almonds and blueberries with anything you'd like. If you're going to add small chocolate morsels, do so after the mixture has baked and cooled.
