Turkey Chili or Vegetarian Chili

Every month or so my brothers, sister and I get together with a few friends and have a wine and cheese night.   Well, our wine and cheese turns more into a delicious feast of more than cheese and drinks are more than just wine.  It's a lot of fun, to say the least!  My brother, Gary always makes something really yummy..and this time it was chili.  Although Gary's chili was full vegetarian, I opted to replace the vegetarian burger crumbles with ground turkey.  Both are excellent!  Here goes....

Turkey or Vegetarian Chili

1 Tbls olive oil
1/2 medium onion chopped
2 bay leaves
1 tsp. cumin
2 tbls. dried oregano
1 tbls. salt
2 bell peppers chopped
2 stalks of celery, chopped
2 jalapeno peppers, chopped
3 cloves minced garlic
2 - 4 oz. cans chopped green chili peppers
3 - 28 oz. cans whole tomatoes -crushed
1/4 cup chili powder
1 large can kidney beans (drained)
1 large can black beans
1 large can garbanzo beans (drained)
1 can corned (drained)
1 -1lb pkg ground turkey OR 2-12 oz. pkgs. vegetarian burger crumbles

Heat oil, add onions and bay leaves, cumin and oregano.  Saute onions until translucent.  Mix in celery, green bell peppers, jalapeno, green chili peppers and your turkey OR vegetarian crumbles. Cover and simmer for five minutes. Mix in tomatoes.  Season with chili powder, salt and pepper. Stir. Pour in all beans.  Bring to a boil then reduce, simmering for 45 minutes.  Stir in corn and cook for five more minutes.
