Apple Bacon Chicken

I didn't feel like cooking tonight (but knew that I would) and I certainly didn't feel like the same 'ole grub.  I opened the fridge without a plan and had no idea what was going to manifest as dinner.  The fridge is sort of bare because I have to make room for a very large Thanksgiving turkey and all the accoutrements.

Chicken breasts are usually mainstay items so guess what was waiting?  Chicken breasts....and bacon...and apples. 

Yup, my lazy bones placed 6 breasts in a baking pan, peppered and very lightly salted them, chopped up a few granny smith apples and 1/2 lb. of bacon in small pieces.  Sprinkled said apples and bacon on top of chicken breasts.  Popped it into a 350 degree oven for a spell (I didn't time it, I just kept checking the doneness and waited for the bacon to get a little crispy).  I threw on a pot of potatoes to make my mom's whipped potatoes.  When it was done, I poured a little of the gravy over the spuds and chicken.  Lo and behold my easy dinner was DELICIOUS!!!!!!  Hubby and the kids loved it....and ...

how can you go wrong with bacon on anything!???
