Stacked Thanksgiving

I am happy to say that my daughter is home from college.  An activity that we like to do together is cook, that way she can get on-the-job cooking lessons and not starve while she's at college.  We discuss making quick, easy meals because along with her academics she is an athlete and during the sport season, quick and easy is a necessity.

This evening I was scrambling and got home way too late. Everyone was out but expected at any moment and I had to come up with a super-de-duper quick meal to feed the masses as they arrived.  Here's the lightening quick Thanksgiving that I threw together.

Turkey Burgers - seasoned with salt and pepper and pan fried
1 can cranberry sauce
2 boxes Stovetop Stuffing mix
1 can turkey gravy
2 bags of Idahoan Homestyle Instant Potatoes
1 can corn

(It does pay to have a few 'instant' items in your pantry stock!)

This meal, although sadly lacking greens, was so fast and it did what I needed it to do. . . fill empty tummies in a short time frame; an easy 15 minutes from start to finish.  It's definitely a quick and easy choice for my daugthter once she returns to college.  I will, however, have to experiment and come up with a more nutritous version.

This was a HUGE success with my hubby and kids.  They were even talking about it and wanted to know if I could make it again...go figure!
