Day 4 - Stuffed Spuds

Hubby was in charge of dinner tonight, at least part of it.  His choice was to make these enormous baking  potatoes.  He readied the spuds on a quick break from working and I readied the filling after gutting most of the upstairs bathroom with my 13 year old son.  Actually, I had little man do most of the work.

I only did two fillings for the potatoes tonight because, honestly, I was pooped out; hubby was still working, little man was helping me with our renovation, Miss Sofie was doing her and her sister's laundry,Whit was involved in homework, Boo wasn't home from work yet and Rosie is being studious at college.

This is a simple, fun meal to make, especially with kids.

Bake your potatoes and create an assortment of toppings.  Here's some ideas to get you started.

Pizza:  sauce, mozzarella and pepperoni (or sausage)
Burger:  Chopped beef, onions, tomato, pickle, lettuce (with or without cheese)
Taco:  Taco season beef, tomato, lettuce, cheddar
This spud is huge!! I could only eat half.

Like I said, this was a two-topping creation tonight, for my own too-tired selfish reasons.

Our toppings were simply sliced chicken breast with a blend of onions, carrots, garlic, celery, shake of salt and pepper and kombu, otherwise known as kelp.  (It's mineral rich so I try to sneak it in wherever I can...hehehe...).  I threw the sauteed veggies in the food processor for a few seconds and voila!!
