One of the things I absolutely love about cooking is that you can throw something together with what you've got and come up with a pretty tasty dish.Tonight's menu was an easy, on the fly, meal. Tortillas. Used to be, when I thought of tortillas I thought of filling it with Mexican/Spanish style food only. The beauty of tortillas, however, is that you can fill them with anything that your wonderful mind can dream up. I made two kinds tonight, one for the fish eaters and one for the non-fish eaters.
Tilapia and Avocado Tortillas
2 tilapia filets
1 handful of grape tomatoes, sliced in half
2 tbls. olive oil
salt and pepper to taste
6 tortillas
1 small avocado, diced
*leftover sweet onion marmalade (see previous post for recipe) ...but you can saute up a medium onion instead
Salt and pepper your filets. In a pan, heat the oil, add the fish and cook about 5 minutes per side. When your filets are almost done, push to the side of the pan and add your handful of tomatoes. Meanwhile, heat a separate pan on high (no oil) and, one by one, heat your tortillas for about 30 seconds per side. You can also heat them in the microwave (follow label directions). I prefer the taste of heating them via skillet.
For each tortilla, simply add a little of the tilapia, sauteed onion, grape tomatoes and top with avocado.
**To make the steak tortillas, replace tilapia with thinly sliced steak and cook steak to preference .
***You can also replace the tilapia with the fish of your choice
