Speedy Bacon


I pick up older food magazines when I can find them.  My brother unloaded a mountain of them when he cleaned out a garage and was ready to toss them over his head into the recycle truck.  AAhhhhh!!  However, because he loves me and he knows that I am a nut about saving books and checking out magazines, he rang and asked 'do you want these?!'  What do ya think my response was?  'YESSSSSS!!!'  But, you must know my brother.  If I don't get over there quickly, they WILL be tossed in the bin!  I moved semi-fast.

I typically go through them and pull out all the recipes and some crafty ideas and health info, but I don't usually keep the whole magazine in tact, unless it is page-for-page filled with recipes.  I don't need the whole thing!  Just the recipes I want to try.  I have an expanding file where I keep the separate categories.  My foodie file is quite full.

Tonight I am making a Cobb salad for hubby,
Boo and I.  The other day, it so happens that,
as I was snooping through a 2006 Martha Stewart
magazine, I found her very cool idea to cook bacon in
the oven!   I can make a Cobb salad, and
breakfast for dinner (as the kids meal) and
have all my bacon done at the same time!!!   
I cook in mass... No  more frying it up
piecemeal in the pan.   LOVE IT!!

Here's how it goes for the bacon.  400 degree oven on a top rack. I adjusted my rack to the second one down.  About 5-10 mins, according to your bacon-doneness preference.

Cobb Salad

I choose a mixed dark leaf lettuce as the base.  On top I added diced hard boiled egg, tomato, avocado, celery and bacon.  I added petite carrots and on this particular salad, sugar snap peas.  Dressings are a preference.  I chose to have mine with a ranch dressing and my hubby and daughter had theirs with a faux 'Olive Garden' dressing (which you search on my postings).  A great meal and very filling.
