The Super Bowl

Tomorrow is Super Bowl Sunday!    How do I feel about this?  Neutral.  Not about the teams playing...just about the actual event.  Being a lifelong New Yorker and the fact that the NY Giants are in, how can I go for any other team?   If the Jets were in, I'd feel the same. I do not mean to offend anyone, of course.   My favorite part is not the game or the half time show, it's the commercials.  That's when I'll run in and pay attention to the action going on.
He Dressed!!

Now, my hubby is a different story.  He will be dressed to the nines in his Giants wardrobe.  Might even paint his face...to sit in our family room and cheer and curse and, well......EAT.
That's where I come in.  That's what my fun Superbowl event is.  Cooking and providing the YuMMMs for my man and my not-so-little kids.

Here's the Lo Down---'Mish Mosh Menu' (because HE really is not focusing on how I put this together!)

Skewered Flank Steak with an Asian dipping sauce (yes, from my favorite posting site...Pinterest!)

Borrowed from Skinnytaste.com.....Thin strips of grilled flank steak marinated with lime juice, ginger, garlic, sesame oil and soy sauce.

Here's how it goes....

Asian Flank Steak Skewers
Ingredients:
  • 1 1/2 lbs flank steak, sliced thin
  • 1 1/2 cups reduced sodium soy sauce (Use Tamari for Gluten Free)
  • 2 cloves minced garlic
  • 1 tsp fresh ginger
  • 1 tsp sesame oil
  • 1 lime, juice of
You can make this on an indoor grill, a cast iron grill pan or make them outside on the grill. Always cut the meat across the grain at a slight angle with a very sharp knife...slice thinly

Soak wooden skewers in water about 30 minutes to prevent burning. Marinate the steak in all the ingredients for about 1 hour or more.

Discard marinade and thread the sliced steak onto the skewers.

Heat your grill or grill pan to high heat; when hot,  grill a few minutes on each side until browned and cooked though

AND.....

Oven baked Rosemary Potato Fries

Ingredients:

However many potatoes you want to use
Salt
Olive Oil
Fresh or Dried Rosemary

Scrub you potatos, skins on and then cut them in a french fry style.
add a little olive oil ....shake on some salt....toss in your rosemary and coat your fries.
Pop them in the oven at about 350 degrees and bake until crispy....or no so crispy...however you like 

*Note....this is how I usually cook...No recipe...just 'a little of this, a little of that'


AND.....the following items, served throughout the day, that I am too tired to type a  recipe for but will follow-up on a future post if you want to try.

Crock pot...'Beer BBQ Pork Ribs'
Caponata (A delish Eggplant dip)
Cold Cuts (not a platter...more like....'Hey Sweetie, do you want a sandwich?' )
And...my sister's dastardly crescent roll, cream cheese, bacon wraps  (low cal....I think NOT!)

Then, of course, there is the beverage selection.  Soda: yes. Water: yes.  Fresh Cows Milk: Yes.
 However, my favorite find was, I met up with a local store who has a wonderful selection of microbrews...and...you can create your own six-packs.  I had fun with that!  I'm sure hubby will too!
