Soy Glazed Salmon

For family dinners, I try to incorporate an Omega 3 dish once a week, for the fish eaters in my family at least.    My favorite fish is salmon.  Salmon sushi, smoked salmon, salmon salad, salmon fillets....you name it, I like it.  For my non-fish eaters, they get a quick and easy meal on fish days.  Their meal was a simple grilled colby jack on a crusty sliced Italian; in other words, a grilled cheese sandwich, with my hubby's homemade chicken soup as a side.

The fish meal consisted of a soy glazed salmon, orzo simmered in my hubby's chicken broth with added carrots and spinach and my go-to veggie side, fresh asparagus sauteed in olive oil and a splash of soy sauce.

This quick-make meal is just what I like for a weekday where the schedule includes a lot of running around.

Soy Glazed Salmon

1/4 c light brown sugar
1/4 c olive oil
3 Tbls. soy sauce
2 Tbls fresh lemon juice (I used lemon juice from the lemon shaped bottle from the store)
2 Tbls. dry white wine or water
2  Lbs. salmon fillet

Combine all of the ingredients (minus the salmon) until the brown sugar dissolves (This is your glaze).  Place your salmon in a single layer on a baking pan.   Pour glaze over the salmon and turn to coat.

Bake 15-20 minutes in a 400 degree oven...basting often (which is what?  3 times during the whole process...not a biggie)
