Curry Chicken Salad

Today was a fly-by-the-seat-of-my-pants kind of day.  Tuesdays should be my kitchen cleanup and organization day.  That pretty much means:  Clean out the fridge, vacuum under the fridge, go through the dish and pantry cabinets and make sure everything is organized and things that should be tossed out does, indeed, meet its target.  You know, the nitty gritty sort of stuff.  Instead I spent the morning sleeping in, because my husband is AWESOME and took care of the 'little' ones in the morning.  Then, out the door for a visit with the doctor with my baby (23 years old) who...as we found out...has strep.  Back home... I found that the kideroos were already home from school!!!!  GASP!!!!! HOW'D THAT HAPPEN!!!??

Lets move on.....a quick prep of tuna wraps for the famished crowd and then on to dinner.  Did I fit in a cup of coffee in there somewhere?  ...hmmm...let me think...no, no I did not.   I washed up the rest of the dishes in the sink, threw a load of laundry in and began calling out directives like an auctioneer.  'Homework time!  Get dressed for your sport before you begin your homework, then right to homework!  Please get your books out! Let me see your planner! What does this little bit of scribble mean??...you should have better penmanship!...'


BUT.....


I would guess that all my children heard was 'Blah, blah, blah.  Blah blah blah blah....' 




Lunch prepped for tomorrow.......

Curry Chicken Salad -

  • 3 cooked boneless, skinless chicken breasts (I poached them, but whatever you prefer)
  • 1-2 stalks of celery, chopped finely chopped
  • 1/2 of a granny smith apple 
  • 5 chopped dates
  • 1 cup mayonnaise
  • 1 tablespoon soy sauce
  • 1 tablespoon of fresh or bottled lemon juice 
  • 1 1/2 teaspoons curry powder or curry paste (or more, or less, depending on your taste)  
  • salt to taste (I didn't add any to the dish but I did add a shake or two while poaching the chicken)
MIX EVERYTHING UP!

*Just a note...I love chicken curry, so I typically use what I have available.  Sometimes I'll add almonds, sometimes mango, pineapple chunks, grapes...you get the point.

Dinner was an eggplant parm....recipe not posted because I just wing it.  The instructions would be:  add a little of this and a little of that and a handful of some of these and a shake of that.  I'll show you what it looked like though...

After all homework was completed and my 'got home later than I expected' mode equalized, dinner prep consisted of nice conversation with my little minions, getting the scoop of the day, laughing at some goofy tv show together, watching my son break it down to a 'Just Dance 3' song and, the best...seeing the smile on their faces.
