Zucchini Bread

 Grandma's Easy Zucchini Bread


2 cups flour

1-1/2 cups sugar

3 eggs

2 cups grated zucchini

1 cup vegetable oil

2 tsp. vanilla

1 tsp. salt

2 tsp. baking soda

1/4 tsp. baking powder

3 tsp. cinnamon

Optional:  1 cup of walnuts or raisins or both

Combine all ingredients.  

Mix thoroughly. 

Pour into two large or four small greased loaf pans

Bake in a 350° oven for 35 minutes for small pans and 55 minutes for large pans.
