
Gary's Zucchini and Onion Quiche
Ingredients:
3 medium sized zucchini
1- 1/2 medium onions
1 package crescent rolls
8 oz. package grated cheese of your choice
(I used cheddar)
1 egg
1-2 Tbls. Dijon or spicy mustard
1 Tbls. dried oregano
1 Tbls. dried basil
1 Tbls. garlic powder
1 Tbls. pepper
Salt to taste
2 Tbls olive oil

Lightly spray a pie plate or cast iron pan with cooking spray (I used coconut oil spray). Open crescent rolls and place them around the pie plate, making sure to press together the edges. Coat the crescent rolls with a tin layer of mustard, making sure to get the sides as well.
Coarsely chop your onion and saute in olive oil for a minute or two. Add thinly sliced zucchini and cook until the onions are translucent and the zucchini is tender. Add all spices and mix well.
In a separate bowl, whisk your egg then add cheese. Mix well.
Add the zucchini/onion mixture and mix well.
Pour into the pie dish and bake at 350 degrees for 45 minutes to an hour (until the center of the quiche is set)
Remove from oven and let sit a few minutes to settle.
If desired, serve with a side salad.
