Rosado's Puerto Rican Coquito

When I was younger, my dad was always in charge of Christmas dinner.  The menu, always the same and always delicious; arroz con habichuelas (rice and beans) tostones, tostones maduro, yucca, batata, pasteles and the biggie, Pernil ...Puerto Rican fresh ham.  But guess what wasn't on the menu....that's right...coquito!!!   WHAT!?  Well, I guess the reasoning was we were four kids and a mom and pop.  Maybe they had the pleasure of drinking
coquito but we sure didn't.  Anyway, fast forward.  I now make our Christmas dinner and I do include the coquito (Yay!!).  So here it is, our annual Christmas drink, Coquito, or otherwise known as coconut nog.

Rosado's Coquito

2 cans evaporated milk
2 cans condensed milk
2 cans cream de coco (NOT coconut milk)
4 egg yolks
1 tsp. cinnamon
1/4 tsp ground cloves
1/8 tsp. ground nutmeg
1 tsp. vanilla extract
12 oz. white rum

In a saucepan, over low heat, combine evaporated milk and spices. While constantly stirring, add egg yolks (make sure it's low heat or you'll end up with scrambled egg coquito!).  Add condensed milk, cream de coco and rum.   Take off the heat...let it cool.  Pour in your glass and sprinkle a little cinnamon on top.  Enjoy warm or cold!
