Spinach and Bay Scallop Salad

Lunch today was a very delicious salad.  My hubby, Rosebud and I all enjoyed the simple but tasty dish.  How'd I throw it together?  Easy.

Spinach and Bay Scallop Salad

2-3 cups of bay scallops, rinsed and patted dry.
1 tablespoon of minced garlic
2 tablespoons of olive oil
1/2 red sweet pepper, cut up in small pieces
1/4 cubed avocado
Salt and Pepper
Dill dressing (bottled)

Heat your olive oil in a pan, add garlic and saute just until golden.  Add bay scallops, a shake of salt and pepper.  Keep on a medium-high heat, searing the scallops for 3-4 minutes.  Push scallops to the side and add the sweet pepper, heating until just warm but with a little crunch.  

Top your bed of fresh greens (I used spinach) with your scallops, sweet red pepper and avocado.  Drizzle with dill dressing.
