Broiled Salmon With Basil Sauce

Hubby and I were recently at a health and wellness seminar for the nutrition products that we use.  Although the products involve meal replacement this is far from a typical meal replacement program.  The products are packed with protein, minerals and vitamins and they taste great!..no kidding, even the kids love it!  They replace vital nutrients that our bodies are lacking due to the unfortunate practice of over farming our food supply, and help to cleanse out the pollutants (pesticides, for example) that wreck havoc on our immune system.  Millions of cells die in the course of a day, and our body, of course, replenishes those cells, creating new ones.  I prefer to give my family a great nutrition option so that those new cells are created to the best of our body's ability.  Otherwise, those new cells will be made with what we consume: nutrient poor, pesticide rich foods that can compromise our immune system.  No thanks!

One of the things I love about this nutrition program, other than the obvious benefits of energy, stamina and healthy weight loss is the fact that hubby, the kids and I do not deprive ourselves of any meal preference or food item that we desire.  That would be an awful nutrition plan for me if I had to peel away from the foods I love and chances are, I wouldn't stick with it because I would just cave and say 'forget it...I want to eat!'

Anyway...

So, we are happily at the health and wellness event, where delicious meal replacement is at the core and we break for lunch.  Served was grilled veggies (including potatoes), rice pilaf, chicken franchaise, salmon in a light sauce, fresh fruit, an awesome mixed salad...you get the picture.

The salmon was delicious!  So, as soon as I got home....the search went out.

Up first is a recipe of broiled salmon in a creamy basil sauce adapted from epicurious.com.  It's to die for!  Here's how it goes...

4 salmon filets
olive oil
2 tbls. lemon juice
salt and pepper

For sauce:
20 fresh basil leaves
1/3 cup chicken broth
2 cloves of garlic
1 cup light cream
1 tbls lemon juice
2 tbls butter
salt and pepper to taste


Set oven to broil.
lightly brush your salmon fillets with olive oil (both sides)
salt and pepper to taste
add a little lemon juice to each piece
Set aside


For the sauce:
Combine the basil, chicken broth and garlic in a blender or food processor and puree.  Transfer to a heavy saucepan and add cream.  Simmer over medium heat and stir often (about 10 minutes).  Whisk in butter and lemon juice.

The salmon will cook rather quickly so keep a close eye on it.    Serve salmon with the sauce and whatever sides you want.  This sauce would be marvelous with a pasta side so double it and you'll have enough to coat the pasta.
