Tilapia and Whipped Garlic Potatoes

Tilapia is a popular fish in our household. Because it does not have a strong flavor on it's own it is versatile.  It is a mild fish that borrows it's flavors from the accompanying dishes.

Tonight's menu is one of simplicity, Pan seared tilapia, whipped garlic potatoes and a naturally sweet blend of veggies.

For the potatoes, simply peel, cube, cover with water, throw in 1-2 whole garlic cloves and about a tsp. of salt.  Boil until tender, drain water.  Whip potatoes with a hand mixer before adding anything.  This will ensure that your potatoes come out smooth.  Add pepper, a few pats of butter and a splash or two of milk.  Whip with your hand mixer to combine.

For the veggie blend, heat a splash of olive oil in a large pan.  Dice 1 large onion (I used vadalia which is a large sweet onion)  and saute until translucent.  Add 1 diced green pepper and saute for a few more moments.  Add three diced tomatoes and saute just until the tomatoes break down, add a handful of fresh spinach and mix well.  Remove the mixture to a bowl.  Salt and pepper your tilapia.  In a small splash of heated olive oil, cook your tilapia until cooked through (about 3-4 mins on each side).  Add your vegetable mixture to the top and let the flavors seep into and around your fish.  Serve with your garlic potatoes.
