Day 10 - Blueberry Bread French Toast

While my hubby and I are cleansing, the kideroos are just going to have a simple meal.  In the meantime,  if you have any intention of trying the blueberry bread I posted yesterday, here's a delicious take on it.



Blueberry Bread French Toast


2 egg whites
1/4 cup white grape juice
8 slices of blueberry bread - (see yesterday's post)
2 tsp oil
4 peaches, sliced

1)  Lightly beat egg whites and juice in a large shallow dish.  Add the bread slices, flip slices after 2 minutes and let them soak until all the liquid is absorbed.

2) Heat 1 tsp of the oil in a pan.  Add 1/2 of the slices and let them sizzle on a med high heat until toasty
 brown, 2-3 minutes on each side.  Repeat with remaining oil and bread.  Serve warm with fresh peaches.
