Easy Stovetop Mac and Cheese

Who doesn't love a bowl of mac and cheese every now and again?  Well, maybe some people, but I'm not one of them.  There are so may versions of the dish out there and I'd love to give them all a try.  One version I have found is so quick and easy and delicious that it can be made as a quick meal or a quick side dish.  I love it, the kids love, the hubby loves it......here goes!


Easy Stovetop Mac and Cheese


1/2 pound elbow pasta (or any other small pasta)
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
2 tablespoons cream cheese
1 1/2 cups grated cheddar cheese
salt and pepper to taste

Cook pasta according to directions on the box. Drain and set aside. In a saucepan, melt butter over medium heat. Slowly whisk in the flour and continue cooking for 1-2 minutes, whisking continuously, until the mixture turns golden. Slowly whisk in the milk until it all mixes together. Cook until thick, 1-2 minutes.

Stir in cream cheese until melted. Remove from heat and stir in grated cheddar cheese, a little at a time, so it melts easily. Season to taste. Serve immediately.
