Chicken Tarragon Salad

Fast Food:    Going to my fridge and finding something already prepared


As I have mentioned before, I have a big family to feed.  When I make a meal it's usually a production; not only because I'm feeding myself, my hubby and kideroos, but because I like to have leftovers in the fridge..aka fast food.  I know that if there is something appetizing when I open those doors, I won't revert to eating a box of cookies (not that any of us have seen any store-bought boxes of cookies in recent times), but you get the point.  Hubbs hits the fridge always looking for goods and my little man has a stomach that is a bottomless pit.

I was out running errands one day and lunch was neigh, my tummy was yelping and I didn't have any healthy snacks riding shotgun.  I headed to our local coffee shop and lo and behold....Tarragon Chicken Salad Sandwich!   Of course, as I ate, I analyzed.  Here's my version.


Tarragon Chicken Salad


2-3 cups boneless chicken, broken into bite size pieces
(you could probably used canned, but
I haven't tried it.

2 tsp. fresh or dried tarragon (add more or less to taste)

1 Tbls. dijon mustard

1/2 cup mayo (add more or less to taste)

2 stalks of diced celery

1 scallion

1/4 cup dried cranberries

*Mix it up

Serve on a bed of fresh greens or in a sandwich with fresh greens.  As a sandwich, I prefer honey wheat bread and my little man prefers a wrap.  Hubby and the girls just eat it how I serve it.
