Easy Fried Rice

In my previous post, I gave you the recipe for an easy sweet and sour chicken.  I paired that up with a fried rice, which is also a quick, easy dish.

Basic Fried Rice


4 cups of rice that has been pre-made
1 medium onion, diced
1 bag of thawed peas and carrots
2 eggs, beaten
1/4 cup of soy sauce
4 Tbls. vegetable or canola oil
Salt and pepper to taste


In a large pan, heat your oil.  Add onion and saute about 3 minutes or until onions are translucent.  Add bag of peas and carrots.  Cook for another minute or two.  Add your four cups of rice mixing until well combined (I find that two wooden spoons work great).  Push rice to the side and pour in your egg.  Allow the egg to cook a little before you begin mixing it into your rice.  Mix egg into your rice and cook a few more minutes or until you see that your egg has cooked completely.  Add your soy sauce.   Mix well.  Salt and pepper to taste.
